Why Water Matters: The Science Behind Your Cup

Water is 98% of your coffee. It's also the variable most coffee professionals know the least about.

On July 1, BWT water+more and IWCA Germany hosted a webinar that brought together coffee professionals from across multiple continents — producers, baristas, roasters, and retailers — for a guided chemistry session designed not to overwhelm, but to equip.

Dr. Frank Neuhausen (Managing Director, BWT water+more) and Ben Helt (Technical Training Director) walked through what's actually in your water, how it affects flavor and extraction, and how to start having smarter conversations with your suppliers and equipment providers. The session covered total hardness, carbonate hardness, and alkalinity using a hands-on handout designed as a study guide for future learning.

This was the first webinar organized by IWCA Germany, hosted in partnership with BWT water+more, a valued member of the chapter.

The full replay is available above in English and Spanish.

IWCA Breakfast Recap: World of Coffee San Diego 2026, Helen Russell Keynote, and a Network Growing Stronger

What does it look like when a global network shows up in one room? On April 11th in San Diego, three hundred IWCA community members found out. The annual Breakfast at World of Coffee brought together chapter members, producers, roasters, and industry allies for a morning anchored by a keynote from Helen Russell, Co-Founder and Executive Chair of Equator Coffees. She talked about stewardship, soil, and the strength women have always brought to this industry. The room listened. Then three chapters signed MOUs, a quilt found its new home, and everyone walked back into the tradeshow carrying something they hadn't arrived with.

From Barcelona to the National Stage: How IWCA Spain Built a Pipeline — and Monserrat Cornet Walked Through It

When IWCA Spain noticed that fewer than 5% of women competed in national barista championships despite making up 54% of Spain's coffee workforce, they didn't wait for someone else to solve it. They built Espréssate, the first women's barista championship in Spain. Monserrat Cornet won. Then she walked into the SCA Spain National Barista Championship as the only woman in the finals and placed 6th in the country. This is the story of how a chapter built a pipeline, a network built a bridge, and a grant fund opened the door.
